This week’s Cheese of the Week is quite a delight.  It is a Boschetto Al Tartufo.  It is a combination of cow and sheep’s milk, combined with truffle and aged for just a few months.  The cheese and truffle are the perfect compliment for each other.  The truffles are supposedly a rare white truffle.  Why it is that a white truffle appears black is a question I’m not prepared to answer at this time.   The semi-soft cheese combined with the almost garlic-tasting truffle is surprisingly subtle and delicate and wonderful.  It’s a totally clean taste with absolutely no negative after taste.

So lovely!  If you are looking for a truffle cheese, look no further than Boschetto Al Tartufo.  It is exquisite.
